It is important to know that after eating foods containing carbohydrates, blood sugar increases. But the body of a healthy person in response begins to produce a certain amount of insulin, which is responsible for converting this sugar into energy. The speed with which food raises the blood sugar level is called glycemic index (GI).

In the diet should not enter foods that are high GI, quickly digested and absorbed, and this leads to marked fluctuations in blood sugar levels. But foods with a low GI are slowly digested and absorbed, causing a gradual rise in blood sugar levels. Therefore, preference should be given to products with a lower GI.
